
Salepi is mainly used in the East but also in Greece. For the inhabitants of the Ottoman empire, salepi was the most popular drink before the invasion of coffee.
In order for the salepi to reach our hands as a drink, its tubers must orchis mascula nthey are soaked in boiling water to remove the essential oil they contain, which gives the salepi a bitter taste. They are then dried and ground into a powder, which contains arabin, tragacathin and a lot of starch. Because of this content, when the powder dissolves in water it creates a viscous liquid that is sweetened with sugar or honey and flavored with cinnamon or ginger.
