The sweet potato belongs to the complexaceae family and originates from South America. According to Peruvian records, the sweet potato dates back to 750 BC, while it arrived in Europe after the discovery of America by Christopher Columbus.

 

It is grown in China, Africa, America and the Pacific Islands. The countries with the least sweet potato production are Brazil, Indonesia, Uganda and South Africa. In Greece, it is cultivated in the Peloponnese and to a small extent on the islands.

 

The sweet potato is sweet, aromatic, rich in nutrients and has nothing to do with the potato. Its external color can be brown, orange, yellow or red while internally it can be yellow, white, orange and sometimes red. All varieties are rich in starch, while orange-fleshed varieties are rich in carotene.
